In fact oak tanins are so strong that they were used to cure leather. Oak has also been used for the construction of timber framed buildings and for the making of furniture.

Oak is so long lasting that it is reckoned that any furniture made of it, including toilet seats, will last through at least 3 generations. Compare this to other materials used to make touilet seats where the life expectancy is probably just a few years if that.
In terms of hygiene closer grain woods such as those in oak toilet seats provide fewer gaps for bacteria to collect. The tanins in the wood also stop fungi and bacteria attacking and discolouring it.
